Meatloaf Chili Recipe

Chili for a chilly day. Winter has finally come to our neck of the woods. It is so weird to look outside and finally see snow in the middle of January. The silver lining to the cold and nasty weather is that it gives me an excuse to cook some of our favorite comfort foods. Foods like this deliciously simple Meatloaf Chili.


Meatloaf Chili is the perfect recipe to make when you have leftover meatloaf (such as I did, yesterday). I actually created the recipe to use up leftover meatloaf in the past. If you don't have any, well, it can take some time to prepare, as you'll have to make a meatloaf first. I guess you could use plain ground beef, but it just doesn't add the same flavor. There's a saying on a movie or an old song (I can't remember which!) that says "Yesterday's meatloaf, is today's sloppy joe", well, in this case yesterday's meatloaf is today's chili and the recipe is SUPER easy!

Here you go -

Meatloaf Chili

2 cups leftover meatloaf
2 cans crushed tomatoes
1 can dark kidney beans
1 can light kidney beans
1 cup water
4 tablespoons chili powder
1 teaspoon red pepper flakes
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper, as desired

Combine all of the ingredients in a large pot.

Cook on medium temperature until boiling.

Turn the heat down to medium low and continue cooking for 1 hour.

Serve Meatloaf Chili hot with shredded cheddar cheese and cornbread.
