This particular roast was supposed to be stuffed with horseradish, but when I opened the fridge to grab it, the horseradish sauce popped out at me instead and said "let me in, forget the plain stuff, I add so much more flavor" ;-) So, I agreed and let the sauce jump into the dry mix I planned to rub on the outside. Believe me, when I say that sauce sure knew its stuff. The flavor of horseradish in this delicious herb-crusted roast beef explodes in your mouth, just as soon as you take a bite.
| Herb – Crusted Roast Beef Recipe from – Mom's Menu Planning Ingredients • 3 tablespoons horseradish sauce • 1 package Lipton Savory Herb & Garlic dry mix • 4 to 5 lb. Eye round roast Cooking Instructions Preheat the oven to 375 degrees Fahrenheit. Combine the horseradish sauce and Savory Herb & Garlic dry mix in a small bowl. Place the eye round roast in a small roasting pan with a little bit of water at the bottom. Rub the horseradish and herb mixture all over the meat. Make sure to cover the top and the bottom of the roast. Cover the roasting pan with a lid. Place in the oven and bake for 35 minutes. Take the pan out of the oven. Remove the lid and place the roast back into the oven. Continue cooking for an additional 10 minutes or until a meat thermometer reads 125 degrees Fahrenheit. Serve with Garlic Mashed Potatoes.
